I love this recipe for Bourbon Chicken, but it calls for Apple Juice.  What can I sub in for it?  It is only 1/4 cup.  And the Brown Sugar?  Any ideas for that?


Bourbon Chicken -

lbs boneless chicken breasts, cut into bite size pieces

tablespoon olive oil

clove garlic, crushed

1/4
 
teaspoon ginger

3/4
 
teaspoon crushed red pepper flakes

1/4
 
cup apple juice (need a sub)

1/3
 
cup light brown sugar (need a sub)

tablespoons catsup (Carb Control ketchup will be used)

1
 
tablespoon cider vinegar

1/2
 
cup water

1/3
 
cup soy sauce



1.
Heat oil in a large skillet.

2.
Add chicken pieces and cook until lightly browned.

3.
Remove Chicken.

4.
Add remaining ingredients, heating over medium Heat until well mixed and dissolved.

5.
Add chicken and bring to a hard boil.

6.
Reduce heat and simmer for 20 minutes.

7.

Serve over hot rice and ENJOY. (Phase 2 only!)

I have used sugar free pancake syrup as a substitute for brown sugar. It has had mixed success, but in this recipe it might be good as a sub for both the sugar and the apple juice.

There is a brown sugar substitute out there. I haven't purchased it, but it can be found in the baking section/substitute sugar section of your grocery store.

I found an apple flavoring in my grocery store by the spices and vanilla extracts. I use it in yogurt, and it's great! You might try looking for that!

Sugar Twin Brown Sugar is great. I use it all the time on baked sweet potato with some cinnamon & Lite I Can't Believe It's Not Butter.
