Modified Bourbon Chicken

Bourbon Chicken -

lbs boneless chicken breasts, cut into bite size pieces

tablespoon olive oil

clove garlic, crushed

1/4
 
teaspoon ginger

3/4
 
teaspoon crushed red pepper flakes





1/3
 
cup Sugar Free Maple Syrup

tablespoons Carb Control Ketchsup

tablespoon cider vinegar

1/2
 
cup water

1/3
 
cup soy sauce



1.
Heat oil in a large skillet.

Add chicken pieces and cook until lightly browned.

Remove Chicken.

4.
Add remaining ingredients, heating over medium Heat until well mixed and dissolved. *I mix ingredients garlic through soy sauce in a seperate bowl & just add to chicken.  I don't remove chicken from skillet* 

5.
Add chicken and bring to a hard boil.

6.
Reduce heat and simmer for 20 minutes.



Serve this over brown rice or bulgur in Phase 2 & 3.  I add a frozen bag of stir-fry veggies that I steamed to the skillet with the chicken after the sauce has boiled down a bit.  I would also double the sauce next time. 


It turned out awesome & DH loved it.  I am eating the leftovers right now for lunch.

Sounds great. By the way, does the original recipe call for bourbon?
