Sesame coleslaw (instead of sesame nood)

I had a craving for sesame noodles -- the flavor, not the pasta -- so I decided to make up my own recipe with shredded cabbage instead. Sorry I don't have the exact amounts, but I think it's pretty forgiving, just don't use too much sesame oil. It was really really good!

1/2 head of cabbage, shredded

1/4 cup rice wine vinegar

1-2 tbl of sesame oil

1/4 cup (or less, to taste) toasted sesame seed

Shred or slice the cabbage. Toss with rice wine vinegar -- it should be enough to coat, but not soak, the cabbage. Add the oil. It's really a small amount. A little goes a long way with this stuff. Roast your sesame seeds if they didn't come that way. Then toss with the cabbage. Taste and add more vinegar, if needed. Add salt and pepper if you like, too.

Yum yum! If you like it spicy, a pinch of crushed red pepper flakes would also be really good in this.

It's also a great summer time dish because there is no mayo to spoil. (But I'd suggest testing the amounts of things before you go bringing it to a potluck. -g-)
