Need Quick and easy meal ideas

My husband and I have been on the SBD since March and we both love it....have made it a lifestyle change...what we need help on is making quick and easy meals....the meals in the book require so much prep time. We will both be back in school in July and need to know how to prepare a healthly sensible meal quickly (either right before class at 5:00, or right after class at 9:00).....HELP...we want to keep on track but need less prep time...any suggestions would be GREALY APPRECIATED.

I have a very busy schedule as well, here are some of the quick meals I cook...
Taco Bowls (10 mins or less):
Lean ground sirloin, or ground turkey (cook in a skillet w/ 1/2 can diced green chilies)
While the meat is cooking I pop open a can of Black Beans and get them going in a pot.
Have your husband shred some reduced fat cheese like Jack or cheddar or just use LF Sour Cream.
Chop some Lettuce, and grab your fresh salsa.
Pile everything into a bowl and enjoy. I personally like to use LF sour cream instead of the cheese.
Grilled Salmon and Veggies (10 mins or less):
Sprinkle seafood seasoning on two salmon filets and cook in a skillet w/ olive oil, covered on high heat (about 3 mins a side).
Steam whatever veggies you have (cut in smaller pieces so they steam faster. I use asparagus and broccoli most of the time) sprinkle with garlic salt.
If your husband is anything like my bf, make him some cous cous as well. The near east brand takes 5 minutes, and the Mediteranian Curry one is really good.
Chili & Salad (make ahead of time)
Make a big boal of salad and a huge pot of chili.. will serve you many great lunches and dinners throughout the week. I cook my chili while I'm working at home, it's a hard dish to screw up! There are a lot of chili recipes on here, I usually just wing it.
Whole Wheat Chicken Wraps (3 minutes):
Buy a Roasted chicken at the grocery store.
Heat up a few WW tortillas over the flame on your stove.
Stuff with spring mix, sour cream, & fresh salsa (watch sugar count, try to buy fresh in refrigerator section).
Be sure to pull the skin off the chicken.
Those are a few of our rushed dinner standards... Hope some appeal to you!

Another suggestion is to have some pre-cooked and frozen items on hand. It can really make life simpler. I have for the last 3 years done OAMC Once A Month Cooking. I've now been adapting it to the South beach way of Life. You can always have cooked ground sirloin in the freezer, great for taco's. Also I alway's have cooked and diced and shredded chicken frozen in bags for anything. I also keep 5lbs of grilled chicken breast frozen for quick reheating. Also you can double or triple a few things your already cooking and toss the extra in the freezer, for a quick reheat. On the website page for this board I've added freezer instructions on all recipes.
Just another idea!! I run an inhome daycare and have 3 boys. Two of them are in Karate. My schedual is crazy! This has made it so we don't hit Mc Donalds on the way home.
Anything on the grill - fish, chicken, sirloin burgers, lean steaks or pork chops.
Green salad
Another veggie that can be grilled or roasted - eggplant, asparagus, mushrooms, or any combination of veggies.
This is always the quickest meal I can think of, and the clean up is SOOO easy when you use the grill!
