Lunch Help Needed!

Hi there,

I work in an office that has no fridge and no microwave for its employees - basically, the cafeteria makes it as difficult as possible for us to eat a healthy lunch.

I bring my lunch most days, but I am so SICK of salads, and I've never been a big fan of sandwiches. (I'm on Phase 2). Keeping in mind that I can't reheat anything, does anyone have any creative lunch ideas?

Hi Holli,

Can you bring an insulated lunch bag with an ice-pak to work? Almost every day I send DH to work with one.

His favorite lunch is chicken salad: I use 1 can of white meat chicken, add a can of beans (chick peas, white beans or black beans), and I dice up every fresh veggie I have on hand (cucumber, tomato, onion, radish, etc.). For extra kick I add some chopped olives or hot peppers, then add olive oil and vinegar. This recipe makes 2 lunches.

Keeping with the insulated bag or cooler idea...


* How about hummas and fresh veggies?
* Wrap some cold cuts in a romaine lettuce leaf
* cole slaw
* yogurt with slice of reduced fat cheese and a salad or raw red pepper slices or raw green beans (to get in your 2 cups of veggies)
