Trying a recipe I invented : lasagna

I am going to try a new recipe tonight that I made up. There may be something similar that exists, and if anyone knows about one, I'd love to have the recipe to see if my version will work. LOL. But I had a bunch of stuff in my fridge to use up and I thought I'd make some "lasagna".

I'm going to layer in a lasagna pan:

- ground turkey, which I browned with onions, celery and plenty of garlic

- sliced mushrooms

- sliced zuchinni

- and layer with the rest of the cottage cheese and ricotta cheese I have in the fridge

- plus some extra mozzerella to help hold it together

and then bake it in the oven until it's hot and bubbly, probably 30-40 minutes.

Hope it turns out as well as I'm imagining it will. I'm also going to cook some macaroni or spaghetti on the side for DH and the kids. I'm honestly not even tempted by pasta, so I'm not worried about that. Don't put any garlic bread in front of me, though! ;-)

Sounds really good...but won't it fall apart? Wouldn't matter to ME, cause it sounds really yummy anyway, but I'd guess the mozz cheese wouldn't be enough to hold it together?

But it sounds delish, and bet it will taste fabulous!

Yeah, it probably will. The cheese and stuff will slide off the veggies, but I don't care. LOL. It's ready to assemble right now, but I just sent DH to the store to pick up some pasta sauce without sugar. All we have is Ragu. I'm not sure what to do with all that sauce we have that I can't eat.

Update - my concoction turned out really tasty! It was quite runny, though, because of the water in the zuchinni and mushrooms. I had to drain off a little liquid before serving it. I think next time I make this, I'll grill or roast the veggies first, to dry them out a bit. I might add some other roasted veggies, too. But it was super filling, and I didn't feel jipped out of having the noodles at all.

Yum! That sounds great. In addition to roasting the veggies first, you could mix a little egg in with the cheese to firm it up. Also, even though this sounds a little weird, a couple of pinches of nutmeg would probably be really delicious. Nutmeg really complements zuchini, and I've seen it used in sort of similar northern Italian veggie lasagnas. I'll have to try that one of these days.
