Well, I have never had any other fish than what comes in fish sticks and fish and chips ... but i'm going to give the salmon a try tonight. Does anyone have any safe-easy-good salmon recipes? I don't even know how to cook fish.
Would love some ideas!!

I only starting eating salmon on this diet myself! This is what I do (it's really easy & fast!)
Make the marinade:
2 tablespoons olive oil
2 tablespoons fresh lime juice
1 tablespoon dijon mustard
1 pound salmon filet (remove the skin)
Mix marinade together in a flat baking dish.
Add salmon filets (cut in half if they're too big) and cover in the marinade. Let marinate in the fridge about 30 minutes.
Broil about 3-4 minutes per side till it's no longer translucent.
You can, alternatively, grill these.

Here are a few other ideas:
In the regular South Beach Diet cookbook there is a recipe for Orange Roughy with Ginger Scallion sauce that works great with salmon.
Another thought is if you have leftover salmon you can make the salmon patties that you can find in this recipe section.
Poached salmon is delicious. Cover your salmon with water in a large sautee pan, add a bay leaf, the juice of a lemon and some peppercorns and a bit of dill. Bring to a boil, reduce heat and simmer until flaky and cooked thru. Allow the fish to cool. Serve with a mixture of lf sour cream, salt, lemon, garlic powder and dill. YUMMY for a hot summer night.

P.S. I prefer salmon filet as opposed to salmon steak - easier to handle because there is no skin or bones to deal with.

I have to admit....i've only cooked one meal in my apartment in the 2.5 years I've lived there before the SBD.
After my divorce I just started buying the microwave stuff (my ex husband was a chef so I never really learned to cook!).

4 salmon fillets (6 oz. each)
Blackening spices for fish(usually found where the fresh fish is, or spice section)
3 T. olive oil
Rub grilling spices generously into flesh side of fillets. Heat oven to 400 degrees. Heat in a large, cast iron pan over medium-high heat. Drizzle olive oil over both sides of fillets. Place fillets spice-side down in hot cast iron pan. Sear until the spices are brown, about 3 minutes. Carefully, turn salmon, and transfer fish, in the pan, to oven. Bake until fillets are firm to the touch, 5 to 7 minutes.
