Hi - I was just sorting some old WW recipes and ran across this one. I wondered if it's SBD friendly or not? If not, are there any substitutions that would work?

Apple-Cinnamon Acorn Squash

Ingredients:

2 lb acorn squash (about 1 large)

1 tbl butter (or substitute as desired)

1/2 cup apple juice

1/2 tsp ground cinnamon

Instructions:

Trim ends off unpeeled squash, cut in half, and discard seeds and fibers. Slice each half into four 1/2 inch thick slices.

Melt butter/margerine in a large non-stick skillet. Add apple juice and cinnamon; mix well. Add squash and bring to a boil; reduce heat; cover and simmer for 10 minutes. Turn squash slices over, cover and simmer until tender; about 10 minutes more.

Acorn squash is a high GI food and should be eaten rarely in phase 2.

Thanks for the quick reply. If I saved it for a special treat and used a fresh crushed apple, would that be ok?

Yes, without the apple juice you could have it occasionally.
