I was just wondering if it would work to freeze your own splenda or peanut butter flavored yogurt to make it kind of like ice cream? What about the ricotta cremes? Has anyone tried it?

I make yogurt popsicles: FF vanilla yogurt with frozen fruit concentrate and splenda. I have found a food concentrate with no sugar added and that's what I use.

But if you would like to get something "ice cream like" I believe you will have to beat it in an ice cream maker because it's the added air that makes the ice cream creamy. I've been thinking of getting an ice cream maker and experimenting with yogurt but haven't gotten around doing that.

Ohhhh... that makes sense! Thanks for the tip. It might be worth buying an inexpensive ice cream maker to try it out. That would be so much healthier for the kids as well.

Although a yogurt popsicle sounds kinda good too. :)

make sure that when you freeze your yogurt mixture, you cover the yogurt tightly. i covered mine w/ plastic wrap and it turned out much harder and freezer burned than if it was sealed by a lid.

just a thought.

I like to make my mocha ricotta cream and then put it in the freezer for about 20 mins before eating it. It starts to freeze, but is still able to be stirred and eaten. YUMMY! Tastes MUCH better like this IMO!
