Hi everyone,

Just thought I'd share this idea. This would work for P2 & P3.

I had some very ripe peaches in the fridge. Since I was already grilling last night (asparagus -- yum!) I decided to grill the peaches also.

I just cut them in half & pitted them, marinated them in some balsamic vinegar & olive oil, and grilled them on high till they got nice grill marks on both sides and started to soften. I guess I could have had them last night, warm, but dh got home so late we didn't bother with dessert. Instead, I put them in the fridge.

They were awesome today for dessert (cold) -- served with a dollop of Redi Whip Lite. With just the touch of balsamic and natural sugars, they were sweet but not too sweet.

These peaches were small, so I don't feel guilty about eating 2 halves as a portion.

Rebecca,

What a great idea! Do you think it would work with other fruits as well? Maybe apples or pears? What do you think?

I'm trying this tonight. Should be funny when my family looks at me like I've lost my last marble!

Hi Candi,

Yes, I think it would work well with pears -- maybe bananas, but split them lengthwise & put them crosswise on the grill so they don't fall through! I'm not sure what would happen to apples -- why not experiment? I'd cut them into lengthwise sections -- make them thick enough so they don't fall through.

I think grilled fruit would be very nice on top of SF vanilla pudding also.

I learned to grill fruit in my NYC cooking class I took years ago.
