4th of July picnic ideas?

If any of you are attending picnics for the 4th of July....the "bring a dish" kind, what are you preparing?

Although I've been asked to bring German Potato Salad (NOT SBD friendly), I'll still need to take along something for me. Have any of you found crowd-gathering-type recipes that are SBD friendly and crowd pleasing?

I just had a successful birthday party for my son at the zoo... Here's the SBD-friendly things I brought and all enjoyed:


* red pepper strips, broccoli strips (also chips) served with 2 homemade dips made from reduced-fat sour cream (I made dill, and onion).


* A fancy trail mix (more phase-2):

Other ideas:


shrimp cocktail with homemade cocktail sauce (mix sugarfree ketchup with horseradish).


homemade coleslaw


a tomato, basil, balsamic vinegar salad

well, i just made the sweet potato salad from the cookbook for a bbq. I thought it was ok but all my guests loved it (go figure!) :)

Sweet Potato Salad

1 and 1/2 pounds scrubbed sweet potatoes

1 large apple peeled cored and cubed

1 large rib celery chopped

1 tablespoon oj

1 tbsp olive oil

2 tsp cider vinegar

1 tsp splenda

place sweet potatoes in a large saucepan cover w/water and bring to a boinl. cook for 30 min. or until tender. drain and cool. peel and cut into cubes. combine potatoes, apple and celery. in a small bowl whisk the oj, oil, vinegar, splenda and a pinch of salt. pour dressing over potato mixture and toss to coat. cover and refrigerate until ready to serve. :)

What about Hummus on cucumber and celery?

Or you could make ants on a log (peanut butter and raisins on celery)

You could put some fruit in sugar-free jello and bring along some light whipped cream if you want something sweeter.

May favorites I've posted before:

Drained kidney beans, mayo and chipped dill pickle- refrigerate

Chopped brocolli tops, mayo and crumbled bacon (jar bits or to keep to SBD- turkey bacon)

Mix and refrigerate.

Thanks to all for your ideas. There are several ideas here that are refreshingly different from my same ol' same ol'.

Any more ideas are very welcome also. I really enjoy adding to my file of SBD recipes.

I am bringing a Mexican salad

Lettuce

Tomatoes

Mexican Low fat cheese

Red Onion

Red Pepper

Green Pepper

Black Beans

I usually use light ranch and mix a little salsa in the dressing for a Mexican kick, but any dressing or salsa that you like would work fine !!

How about Sugarfree vanilla pudding with fresh blueberries and raspberries at the top (red, white and blue)?

Yesterday was the big gathering. After putting our heads together, several of us pooled our efforts and chose a broccoli salad made with yogurt, ants on a log,, and the Tomato-Basil Couscous Salad from the book. Another picnic goer is diabetic and brought along a pudding and strawberry mix with a little sponge cake added (had to limit that one). The tables were loaded with macaroni & cheese, corn pudding, green beans (SBD okay), baked beans, etc., and all the luscious desserts. I'm sure I sinned by having grilled hot dogs that were not SBD type, but I skipped the buns.

Thanks again for all the suggestions. I think I'm going to prepare some pudding with berries tomorrow for dinner company. And I may have to try the sweet potato recipe suggested by Zwes (I think).
