Every year the kids beg me to make "Red, white and blue cake"  I basically make a yummy pound cake, cut up into cubes and put it in the bottom of a large, clear bowl, then layer with homemade whipped cream and blueberries and strawberries.  Well, obviously I can't eat that this year.  I'm going to have separate plain berries and light redi-whip for dh and I, but  there's really no substitute for the pound cake is there?  I don' t need the cake, but I know dh will just be salivating.


In fact, I'm going to call mil right now and ask her to cook the poundcake.  There's no way I can even survive cooking it.

Hi! I make somthing kinda similiar...

Dont know how SB firendly it is...kinda just started, but I think its "better" than cake:

clear cup, on botton put stawberry (sugar free) jello, once that solidifies

blueberries and then on top, whipped cream.

Hope this is SB friendly! and if so....hope it helps!

Hi six ducks,

I had a thought. I know it's pound cake you're looking for, but maybe as a treat to yourself & dh you could make the Strawberry Buttermilk Ice for the red layer. It's easy and really good -- I served it for company on Memorial Day and it was a big hit. Would maybe distract you from the poundcake part of it? You could still layer the blueberries & Redi whip with it.

You put the idea in my head -- now, I'm going to make it and I bought the blueberries today for the Blue part.

That sounds delicious!

Now that I see a cheesecake posting, I'm now thinking I might make SBD cheesecake with nut crust and blueberries/strawberries as topping.

4th of July must be so fun for you with all your kids. Enjoy!

Dear Six Ducks -

Thanks for posting this question.....I'm off to get some berries also. The flavored yogurt should work very well.

And I'm so curious. Each time I see one of your posts, I'm trying to count six ducks. I come up with four adorable babies at the bottom of your post and four more adorables on the left. But that makes eight! How does that make six? Whatever the answer, you have a beautiful group. Congratulations and enjoy.....they do grow so quickly. I raised three and now have three grandchildren....(and darn if they aren't growing up too!)

I have been trying to find Reddi-Wip Light! Every store must be out of it so far..

Any other brands, that anyone knows off hand..

Try different stores. I find there's a tremendous disparity, for example, betweeen A&P, Stop & Shop and Shop Rite. When I can find the RW Lite I buy at least 2 cans! I've had the best luck at Shop Rite.

one more thought: I did buy a generic store brand recently and it was good and SBD legal also.
