Every year the kids beg me to make "Red, white and blue cake"  I basically make a yummy pound cake, cut up into cubes and put it in the bottom of a large, clear bowl, then layer with homemade whipped cream and blueberries and strawberries.  Well, obviously I can't eat that this year.  I'm going to have separate plain berries and light redi-whip for dh and I, but  there's really no substitute for the pound cake is there?  I don' t need the cake, but I know dh will just be salivating.


In fact, I'm going to call mil right now and ask her to cook the poundcake.  There's no way I can even survive cooking it.

I went to two stores last night and couldn't find the rediwhip light either.

Dear Six Ducks,

I love the photos, the signature and the original screen name!

There's a ricotta cheesecake recipe, too, and I don't think it calls for Redi-Whip. I'm thinking of using the following.

For crust: from Maggie's Key Lime Pie

For cheesecake part: Ricotta Cheesecake recipe (I want to use up some ricotta. . .)

For topping: From the blueberry creme pie recipe I posted, but add some strawberries or raspberries, too, for the red.

You are the one that got me thinking about Red, White, & Blue!

(And I think it would be okay to use lite cool whip this one time if it's easier to find. . .)
