HELP! How do I cook a spaghetti squash?

I did a search.  I promise.  I've been looking for a long time.  I know I read detailed instructions on exactly how to cook spaghetti squash, but I can't find it.  Can someone help?


I do have the recipe for the spaghetti squash casserole.  I want to cook it for that (how long do I microwave or boil?) and also know how to cook it to use with meatsauce in place of pasta.  Speaking of meatsauce, I'm looking for a recipe for that too.  I've looked at several stores and cannot find a no-sugar-added pasta sauce.

Be very careful when you do this, I was surprised how hard the outside of the squash is.

Split squash in half. Scoop out seeds. I put mine in a 9" s 13" pan split side up. Put in microwave for 10 min, then poke with fork to see if done. If not done, a few minutes more. When completely cooked through, scrape out strands with fork.

I found Ragu light which is pretty good. Up on the top shelf over the other spaghetti sauces in my grocery store.

Here's what I do, but it's not a formal recipe.

Chop some onion & garlic.

Sautee in olive oil in a dutch oven or big pan with lid.

Add some ground turkey & brown (can use lean beef instead, but ground turkey is more guilt-free & just as delicious).

Add spices: I use oregano, fresh basil, fresh parsley if I have it, salt & pepper. I also like to add some pesto if I have it and some red wine (you can also add a spoon of sugar if you're willing to make this small cheat.) Let that heat up to get the flavors going.

Add a large can of crushed tomatoes or you can add some chopped fresh tomatoes to make it really good.

Cover & let simmer several hours if you have the time so flavors can intensify.

You can adjust quantities as needed (not that I gave you any, but you can use several cans of tomatoes, for example). If it's too liquid, add a small can of tomato paste.

Hope that helps. I also throw in any leftover bottled sauce that's in the fridge, to use up leftovers.

If you microwave the squash it will be easy to cut, but HOT (be careful).
