I'm looking for the one from the book.  I had to return my book to the library and cannot find it by doing a search of the board.

editing to say I made them anyway.  I boiled them and I think I was supposed to steam them because they turned out very runny.  I used ff sour cream instead of ff half&half because that's what my grandmother always put in her mashed potatoes.  They were YUMMY!  All four kids ate them up and never noticed they weren't real potatoes!  Maybe I'll tell them tomorrow.  We had them with a bit of sirloin, green beens and a half glass of red wine.  What a great dinner!  Also an avocado got smushed in the grocery bag so I made some quick guacamole with whole wheat pita "chips" - now that part was heaven.

Is there any reason I shouldn't make this with Smart Balance spread instead of the spray?

Do these REALLY taste like potatoes? I am not a big fan of cauliflower and I just can't understand how these would fool anyone into to thinking they are potatoes. I actually laughed out loud when I read the recipe in the book because I'm so skeptical. LOL. I'd love to hear what other people think about it!

They actually do, and the texture is very similar too.

The butter makes that cauliflower-y taste disappear.

I think it's just that you long for potatoes after a while, and whipped cauliflower with a steak feels a lot like the real thing. I actually like these better than cauliflower on its own. In my opinion, the look and texture tricks your brain. These really are a yummy treat!

Yes, they really do taste like mashed potatoes.

Maybe I'll try it when my in-laws are here. Hehe... That way if I don't like it, I still won't have too many leftovers. I know that anyone who eats cauliflower would like it (my DH), and I might even be able to get the kids to eat it, but I'm just not so sure about me.... ;-). Funny, because I'm the one who will eat almost anything!

Thanks for all the feedback! You guys *almost* have me convinced. LOL.
