Caramelized-Onion, Spinach, and Bacon Quiche Cups (P2)
Makes 6 servings.

Olive oil cooking spray
1 (10 ounce) package frozen chopped spinach - thawed, drained
and squeezed dry
1/4 cup low-fat sour cream
2 tablespoons minced shallots
1 cup evaporated skim milk
1/4 teaspoon salt
1/8 teaspoon pepper
2 egg whites
1 egg
3/4 cup Caramelized Onions (about 3 cups uncooked)
1/3 cup chopped Canadian bacon
1/4 cup shredded reduced-fat Monterey Jack cheese

Preheat oven to 350 degrees.

Lightly spray muffin pan or ramekins with olive oil spray.

Combine the spinach, sour cream, and shallots in a small bowl. Combine the evaporated milk, salt, pepper, egg whites, and egg in a medium bowl, and stir well with a whisk.


Stir 1/3 cup milk mixture into spinach mixture. Spoon the spinach mixture into bottoms of muffin pan. Add Caramelized Onions, and top with bacon and cheese. Pour the remaining milk


mixture over cheese. Place muffin pan in oven, and bake at 350 degrees for 45 minutes or until set. Let quiche cups stand 10 minutes.

Susan,

I have been meaning to make this for months and finally got the ingredients. I have a few questions. How do you carmelize the onions? Can I use muffin liners instead of just spraying the pan? My pans are kind of gross looking, need new ones. Also, does this reheat well? Have you ever made it in a pie pan? Do the ingredient amounts change for that? Thanks in advance!

I went ahead and made it last night and we ended up eating it for dinner instead of saving it for breakfast. It was too time consuming for me but we both (DH) loved it. Would not be a pain to make on weekends maybe. I ended up making it in a square Pyrex dish, added extra egg because it did not look like enough but it would have been more than enough as is, also added a little extra cheese, thought the onions would be too much but it was a perfect amount.

I carmelize my onions on a very low flame in a big saute pan (covered).
