Eggplant Pizza
1 eggplant, cut into 1/2-inch thick slices (some people like them thinner)
olive oil
tomato sauce (I use tomato paste/puree-it has no sugar)
dried oregano
grated low fat mozzarella (cheddar is also good)
grated parmesan (optional)
Brush slices on both sides with oil (or spray if you have a spritzer).
Spread each slice with tomato sauce/paste, then sprinkle with oregano, and then cheeses.
Bake at 425F for 10-15 minutes.

has anyone tried this? i'm thinking about making it but i'm not sure if i should bake the eggplant on its own a little first so it's crisper!
