Substitute for Flour in Pan Frying

Ok, here is a strange question. My kids love Turkey Cutlets (and veal too) sauteed "Marsala" style or Francese (Lemon and white wine) which I think I could make SBD-Friendly.

Except...In the past I always dredged the Turkey (Chicken or Veal too) in egg whites and seasoned flour before sauteeing or pan frying. I know I can still use egg whites, but what can I use to create a "coating" without using flour?

Any suggestions would be helpful. I have 2 packages of Turkey and Veal Cutlets in my freezer calling to me. Other recipe ideas would also be welcome.

I think parmesan cheese would be really good. Also, once you get to P2 you can use whole wheat flour or make crumbs out of any SBD friendly bread.
