I have a recipe for a wonderful sugar free peach pie but it calls for a graham cracker crust. I was wondering if anyone had a good substitute for that? The pie is SO simple too! You use about 4-5 fresh peaches, cut up, sugar free cook and serve vanilla pudding made w/fat free milk, sugar free peach jello, and Splenda or sweet n low to taste. Layer the peaches on bottom. Sweeten w/Splenda or Sweet-n-low. Cook the pudding then stir in the jello-mix well. Pour over the peach layer and top with whip cream, if desired. The recipe also says you can do the same thing w/strawberries and strawberry jello. Sounds good to me!

The recipe sounds really good. I have actually been thinking about trying to make a crust out of crushed walnuts, margarine and Splenda (and then baking it for a few minutes?) and topping it with Sugar free chocolate pudding and fat free Cool Whip. Maybe this kind of crust would work for your peach pie. Another idea would be to use a flour crust, only substituting the white flour with whole wheat flour, etc. Let me know how your pie turns out when you figure out what to do. And then would you mind sharing the recipe?? I love fresh peach pie. :)
