BBQ chicken pizza!

Phase 2 Pizzas


I made pizzas last night using the advice in the pizza post below.  They were wonderful!  I can't believe this is a diet!


I used the large size LaTortilla factory Whole Grain Wheat tortillas with no trans fats as a crust.  I put each plain tortilla in the oven straight on the rack for a few minutes on each side to get them crisp.  I forgot to use olive oil, and next time I will spray them with my misto first.


BBQ toppings:
Carb Options BBQ sauce (spread in a thin layer w/ spatula)
cubed grilled chicken breast (I cook a bunch earlier in the week for use in lots of recipes)
Low fat Mexican blend cheese (low fat sharp cheddar would work)
sliced onions sauteed in olive oil with garlic
turkey bacon pieces cooked (optional)

Italian toppings:
Sugar free sphaghetti sauce (spread in a thin layer w/ spatula)
turkey pepperoni
turkey bacon pieces cooked
sliced onions sauteed in olive oil with garlic
Low fat Mozzarella
chopped green peppers


Cook at 425º just long enough (about 7 minutes) to melt cheese and warm toppings (all toppings are fully cooked to start with).  The crust can quickly overcook.


I served these with Spinach Salad recipe.  Yum!  Next time I'd like to try more veggies on the pizzas.

Sounds great! I'll have to try toasting the tortillas first, next time I make this.

I just put the veggies (onions, peppers, eggplant, etc.) & bacon on top uncooked and it all cooks nicely at 425 degrees in a few minutes. Just a thought to eliminate the extra steps & dirty pans. . .
