Chef's Trick: Raw or Cooked?


You've got a carton full of eggs—some are raw and some are cooked, but you've forgotten which are which. How can you tell a raw egg from a cooked egg? With this simple trick:


  1. Take the egg and place it on a flat surface.
  2. Start it spinning at a moderate speed.
  3. Stop the egg and then release it quickly. If it continues to spin, it's raw. If it stays still, it's hard-boiled.

What's the science behind this handy trick? A cooked egg is uniform throughout, so its contents will all travel at the same speed and stop all at once. A raw egg, on the other hand, is solid on the outside and liquid on the inside, so even when the outside stops moving, the liquid continues to travel until it has come to rest, causing the egg to keep spinning.

Cathy, speaking of hb eggs, do you ever get concerned that after eating 2 eggs for breakfast you shouldn't have more eggs later in the day? I love hb eggs, deviled eggs & egg salad, but don't make them too often because we have eggs almost every day for breakfast. I'm curious if you or anyone else has the same concerns.

I usually have egg salad or hard boiled egg for snack if I've had an oatmeal breakfast or a yogurt for breakfast.
