I got the recipe here about a week ago but will type it out below along with my recommendations to change it. Anyway, 4 of the 5 of us just tried it. All of us liked it and want it again! (DS age 3 y didn't want any. He doesn't know what he's missing!)

Crust (I think this was from the cookbook)

2-3 cups ground pecans

1/2 C trans fat free margarine spread

Artifial sweetener to taste

Preheat oven to 450. Mix ground pecans, melted margarine and sweetener until combined. Press mixture into a pie plate and bake 10 minutes. Remove and cool completely before adding filling.

Cheryl's notes - I used a tad over 2 C ground pecans and it was too much for an 8" pie plate. I used 3 envelopes splenda, I couldn't taste that it had sweetener in it at all. I melted the margarine. I mixed it all in my food processor.

Cheesecake filling

8 oz fat free cream cheese

1 tsp Crystal Light

1/4 cup skim milk

small tub fat free cool whip

cream together cream cheese and crystal light. Add milk. Fold in cool whip. Pour filling into pie plate and chill 4 hours.

Cheryl's notes - I would mix the milk with the crystal light and cream cheese all at once. I used Raspberry lemonade flavor and even though we all liked it, you couldn't taste the rasberry, just the lemonade. I also only let it chill for 3 1/2 hours and it was fine.

Anyway, as I said before it was liked well by all of us who tried it!

Probably. I love lemonade but if they have key lime flavor crystal light - well, that's where I'll be! I figure I can try any flavor and it should work.

could you use sugar free jello? They have lime flavor of that....

I've been wondering the same thing. I just don't know how well it would come out of the pan without a crust.

Just to let you know I made this last night and used the light redi-whip and strawberry-kiwi crystal light. it is sooo good and my parents even said "this is quite good for diet food"

I had to roll my eyes and laugh.

Let me know if anyone tries it wth the jello. I wouldn't mind making a lime one..!

I made this last night with Crystal light Raspberry Ice, and Lt. Rheddi Whip. I didn't make the crust and just served it in small dessert glasses. We loved it!! Thank you for helping me get through P1!
