Cheesecake!

I got the recipe here about a week ago but will type it out below along with my recommendations to change it. Anyway, 4 of the 5 of us just tried it. All of us liked it and want it again! (DS age 3 y didn't want any. He doesn't know what he's missing!)

Crust (I think this was from the cookbook)

2-3 cups ground pecans

1/2 C trans fat free margarine spread

Artifial sweetener to taste

Preheat oven to 450. Mix ground pecans, melted margarine and sweetener until combined. Press mixture into a pie plate and bake 10 minutes. Remove and cool completely before adding filling.

Cheryl's notes - I used a tad over 2 C ground pecans and it was too much for an 8" pie plate. I used 3 envelopes splenda, I couldn't taste that it had sweetener in it at all. I melted the margarine. I mixed it all in my food processor.

Cheesecake filling

8 oz fat free cream cheese

1 tsp Crystal Light

1/4 cup skim milk

small tub fat free cool whip

cream together cream cheese and crystal light. Add milk. Fold in cool whip. Pour filling into pie plate and chill 4 hours.

Cheryl's notes - I would mix the milk with the crystal light and cream cheese all at once. I used Raspberry lemonade flavor and even though we all liked it, you couldn't taste the rasberry, just the lemonade. I also only let it chill for 3 1/2 hours and it was fine.

Anyway, as I said before it was liked well by all of us who tried it!

Crystal light makes a Strawberry-Orange-Banana flavor that is really good. That might go real well with your cheesecake dessert!

Cathy, Thank you so much! It's great to learn from each other, and the support is wonderful, especially after a morning like today. I know this is stupid, but I've been weighing myself daily and I dropped 3.6 pounds the first two days, and the scale has not moved one ounce in the three days since then. That alone is not something to worry about, but I start thinking about how long this journey is going to take, and it makes me SO angry that I didn't do something to nip it in the bud a long time ago. Anyway, here is something positive to end on...my waist has dropped almost 4" in 5 days. That is something to celebrate and my wedding dress just came in. I think I'll wait a few more weeks before trying it on! Have a great day! I'm working on mine. :)
