Since I grow a salsa garden I make tons and jar it or freeze it.
Recipe:
8- Roma Tomatoes (See below)
1- Red Onion (or any kind)
2-3 Serrano Peppers- no seeds (caution, they are hotter than Jalapenos)
3-4 tbls. of Cilantro
the juice of 2 Limes
Salt (Dh likes alot)
About the tomatoes: I cut a X on the bottoms and put them in a heat proof bowl. I then add boiling water to cover and cover the bowl for 5-7 mins. After that I put them into cold water and then peel the skins off and then dice. I like the texture of the salsa better this way, but you can just leave the skins on if you like.
What I find that works is just play with a recipe until it suits your family.
