Uncle John's Chili

Uncle John’s homemade Chili
1 lbs. ground beef or turkey (I use turkey)
1 TBS garlic powder
2 lg. Onions, chopped (I use froz. already chopped)

2 lg. Onions, chopped (I use froz. already chopped)
2 celery stalks, diced
3 green peppers, diced (I use froz. tri-colored Julianne peppers)
1 tsp. Salt
1/2 tsp. Pepper
1 tsp. Oregano
1 tsp. cumin (I like to use alot)
1 TBS chili powder
1 (28 oz. Can) of crushed tomatoes
2 (19 oz cans) kidney beans (I use kidney & black beans)
3-4 shots of tobasco sauce
1. Brown the meat.
2. In a separate pan, sauté 1st 4 items in 2 TBS. oil.
NOTE: I didn't do this step (by mistake), I went to step #3. My chili didn't suffer any consequences, so I always skip this extra pan-dirtying step!!!
3. Place all ingredients into a pot & simmer for 1 hour, mixing and scraping the bottom frequently (every 15 minutes or so). **** Or put into crockpot all day on LOW, or 3-4 hrs on HIGH.
