I have been having this strange craving for cold soup. It has been so hot and I am craving light, cool meals that don't require much time on the stove. I noticed that there were some summer soup recipies highlighted on the main ivillage page today and I thought we could maybe share some chilled soup ideas or recipies that are SBD friendly. Anyone know any good ones outside of the traditional gazpacho? I am going to try the chilled tomato soup from the SBD cookbook this week and I'll let you know how it is.

This is one from the ivillage mainpage that looks good and SBD friendly.



1 pound tomatoes, chopped (about 4 tomatoes)

1/4 cup chopped red onion

1/4 cup chopped seedless cucumber

1/4 cup chopped red bell pepper

1 clove garlic, chopped

2 tablespoons extra-virgin olive oil

1 tablespoon red-wine vinegar

3/4 teaspoon salt

1/2 teaspoon cumin

1/8 teaspoon cayenne pepper

2 avocados, diced (about 2 cups)


Make the soup: Combine all ingredients except avocado in a large bowl. Mash lightly with a potato masher, stir in 1 cup water, cover, and chill for at least 1 hour or up to 6. Stir in the avocado and serve immediately.

This is one I make at the end of summer, when I have too much zucchini in the garden.

Hi Maegan,

I posted a Cream of Asparagus Soup a while back that would be good cold. I'm sure it would come up on a search (find messages about....)

PS And the gazpacho recipe in the SBD book is really good -- sounds similar to one of the ones in the first post or so.
