(from the cookbook)

1 cup WW bread crumbs (I used crumbled Ryvita multigrain crisps instead)

1/4 cup Parmesan cheese, grated (skipped, cheese had gone moldy)

1/4 cup finely chopped almonds (also threw in a few macadamias)

2 TBSP chopped parsley

1 clove garlic, crushed

1 TSP salt

1/4 TSP thyme

ground black pepper

1/4 cup olive oil

2 pounds boneless, skinless chicken breast, pounded to 1/2" thickness

Preheat oven to 400 degrees. Mix all dry ingredients, dip chicken in oil, then roll in breadcrumb/spice mixture (I used a shake & bake bag). Bake for 25 minutes until chicken is done. Makes 6 servings. (halved because I was only serving 2 people)

I served this with mashed cauliflower and a salad. yum!

I've tried this before too and loved it. And my finace had made it for dinner, so it must be pretty easy...haha!

This is one of our favorites....even my 16 year old son loved it! The only drawback is that you can't find whole wheat bread crumbs anywhere....and making them yourself takes a bit of time.

making the crumbs took me all of....20 seconds.

place whole grain crackers in bag, smash with hammer.

I couldn't find WW bread crumbs at the grocery store either, and I have not had time to make it to the health food store, so I subsituted WW flour..It turned out really good. I just made it for dinner last night!

I made my own ww crumbs by throwing some SBD-friendly bread into the cuisinart. In fact, you can go ahead and make the entire topping (including the cheese, nuts, fresh thyme, etc) in the Cuisinart all at once.

I got the recipe from one of the SBD books I have. I am so glad I have them. They are great to help me learn how to cook the foods right and to have starter recipes as I learn what foods I can have!
