Southwest White Chili
1 tbsp. olive oil
1 1/2 lb boneless, skinless chicken breast cut into small cubes
1/4 cup chopped onion
1 cup chicken broth
1 can 4oz chopped green chilies
1 can 19oz white kidney beans (cannellini) undrained
2 green onions sliced
Southwest Spice blend
which is:
1 tsp Garlic Powder
1 tsp ground cumin
1/2 tsp oregano leaves
1/2 tsp cilantro leaves
1/8 tsp ground red pepper
Directions:
Heat oil in large saucepan over medium high heat. Add chicken and onions, cook 4-5 min. Stir in broth, green chilies, and Spice blend, simmer for 15 min. Stir in beans. Simmer 5 min. top with onions. Garnish with Monterey Jack cheese (reduced fat). Makes 4 cups.
Also, if this is "legal", do you think it would freeze as well as Uncle Johns Chili?
