1 tb + 1 tsp veg oil
10 oz skinless boneless chicken breast,cut into 1/2" strips
2 c sliced mushrooms
1 c onions,sliced
1 c low-sod. chicken broth
2 tsp all purpose flour(I used WW flour)
3 Tbs nonfat sour cream
1 tsp red wine
1 tsp dijon mustard
1/4 tsp black pepper
1) In med skillet, heat 2 tsp oil, add chicken. Cook over med-high heat ,stirring frequently,until golden brown. Remove chicken from skillet,set aside.
2)In the same skillet,heat remaining oil,add mushrooms & onions. Cook.stirring often,until all liquid has evaporated and the onions are golden brown.
3)In a small bowl, with a wire whisk, combine broth & flour,blending until flour is dissolved,strain & add to skillet. Stirring constantly,bring liquid to a boil over high heat, reduce heat to low. Simmer 10 mins.,stirring frequently.
4)Stir reserved chicken into broth mixture,simmer 5 mins. Remove skillet from heat,stir in sour cream,red wine,dijon mustard & pepper.
