I was cleaning out my cupboards and found these recipes. They are from when dh was doing sugar busters. They were treats another family doing sugar busters brought into church for coffee hour. DH must have liked them for me to ask for the recipes, but I don't remember them. (from more than a year or so ago.) Anyway...

Apple Orange Poppy Seed Cake

8 egg whites or 4 extra large eggs

1/2 cup plus 1 1/2 teaspoons veg oil

1 1/4 cups unsweetened apple juice concentrate

3/4 cup plus 1 Tablespoon unsweetened orange juice concentrate

1 tablespoon plus 2 teaspoons poppy seeds (optional)

1 1/2 teaspoons cinnamon

2 3/4 cups all purpose flour

2 1/2 teaspoons baking soda

ok, now I see that it is all purpose flour, use whole wheat instead?

Peanut Butter Muffins

2 cups whole-wheat pastry flour

1 tablespoon baking powder

1/2 teaspoon sea salt (optional)

1/4 cup unsweetened, natural style peanut butter

1/3 cup oil

1/4 cup honey or molasses

1 1/2 cup milk

Wondering about the honey on this one.

Thanks!!

Hi Cheryl,

For the Apple Orange Poppy Seed Cake: If you use whole wheat flour, it would be better, but the apple and orange juice would make it good for P2 or 3 (not P1)

Peanut Butter Muffins would be good for Phase 2 if the honey/molasses were omitted. I think you could just add a bit of splenda and the recipe would work.

HTH,

Karen :)
