Two family favorites!  :)

Pizza Burgers (all phases)<?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />

Lean ground sirloin

Tomato sauce

Italian Seasoning
Sage, tarragon, oregano, or whatever you like

Garlic Powder

minced or dehydrated onion

Salt and pepper

One egg

Reduced-fat shredded mozzarella cheese

To meat, add Italian seasoning, spices, garlic powder, onion, salt, pepper and one egg.  Mix well.  Shape into large patties. Thoroughly cook meat on both sides.  Spoon some thick tomato sauce or tomato paste on top of each patty, sprinkle lightly with oregano (or other fave Italian herb).  Sprinkle top generously with shredded mozzarella cheese and melt.  Optional:  top with sautéed green bell pepper and onion, add before cheese.

Taco Junk (all phases; with pita/tortilla, for Phase 2)

You can use it on top of salad, or as burritos in a whole wheat tortilla or pita.  It's sooooo good and freezes well, too!

1 pound ground turkey breast (or extra-lean ground beef)
14 1/2 ounces  diced tomatoes -- canned
14 1/2 ounces black beans – canned,
drained
1
4 ½ ounces garbanzo beans (chick peas) – canned, drained
Taco seasoning
1 package ranch-style dressing mix
2 cups salsa or picante sauce

Brown meat and drain fat.  Put all ingredients in crockpot and cook on high for 4 hours.
You can simmer on the stove for about the same time.

For the Taco Junk, do you think you could use a different bean in place of the garbanzos? Try as I might, I can't even come close to choking them down. Maybe I could use red beans or kidney beans instead?

I can't choke down garbonzo beans either so when I made it earlier this week I simply omitted them.
