Baked Chicken Breast![]()
Serves 2
Ingredients
2 boneless, skinless chicken breasts
2 tsp. fresh tarragon
1/2 c. button mushrooms, sliced thin
2 cloves garlic
1/4 c. white wine
1 c. fat-free chicken stock
1 T olive oil
1/2 c. fresh grated parmesan cheese (pecorino or romano)
salt and pepper
Instructions
Preheat oven to 400 degrees. Chop tarragon and garlic together with olive oil to make a paste. Massage garlic mixture all over breasts. Place chicken in 9†x 9†glass baking dish. Add mushrooms, stock and white wine and cover with foil. Bake for 25 minutes. Remove foil, baste breasts and sprinkle cheese on top of each. Bake for another 5 – 10 minutes or until browned and cheese has melted. Serve.
