Chicken Adobo

Ingredients
4 boneless skinless chicken breast halves
2 T apple cider vinegar
2 T low sodium soy sauce
Ground black pepper to taste
1-2 cloves garlic slivered
1 bay leaf
1 T and 1/2 tsp olive oil
Directions
1. To marinate: place chicken in to a large bowl or ziploc bag. Pour vinegar and soy sauce over chicken and season with black pepper to taste. Toss to coat, making sure chicken is all coated with marinade. Refridgerate chicken marinade 30 minutes turning after 15 minutes.
2. Heat oil in large skillet over medium heat and brown garlic (be careful not to burn garlic). After browing garlic ; remove it from the oil.
3. Place marinaded chicken in hot oil. Pour remaining marinade over all and add bay leaf. Reduce heat to low and cook chicken for 15 minutes each side or until juices run clear; marinade will reduce and make a flavorful gravy. If you like garlic add garlic to the gravy after heat is turned off and allow to set 5 minutes to absorb the gravy; then eat garlic.
