I made up a new dish last night that turned out really good-- thought I'd share it.
Amounts are approximate and this serves 3-4. . .
One pound ground turkey
One red (sweet) pepper, cut into julienne strips
3/4 package mini portabella (or any kind you like) mushrooms, sliced
1/2 large vidalia onion, sliced
bunch of fresh basil, cut in strips
a few dollops of FF sour cream
about 1/2 to 2/3 c chicken broth
1-2 cloves garlic, minced
olive oil
Heat olive oil in sautee pan -- when hot, add pepper strips, onion & garlic, and cook till softened; add mushrooms and cook till mixture is soft and mushrooms release their liquid.
Set aside vegetables, add a little more oil in same pan, and cook turkey till cooked through.
Add back vegetables, then add broth, sour cream, and basil. Season to taste with salt & pepper. Heat through.
You can eat this alone, serve it over ww pasta or veggies, or as you wish.
