This is my family's favorite crockpot meal. I think the original was in Cooking Light, but I've modified it a bit.

2 to 3 pound London Broil

1 Package low sodium taco seasoning (We use two, but my family likes things spicy)

1 large chopped onion

1 large chopped green pepper (I frequently use a mixture of red and green)

1 Tbsp white vinegar

Trim visible fat from meat. Rub taco seasoning over meat and place in bottom of crockpot. Add onion, pepper, and vinegar. Cook on low for 10 hours.

Remove meat from crockpot and shred. Pour sauce over meat and serve.


We usually eat this wrapped in WW tortillas with tomatoes, lettuce, salsa, cheese, and refried beans. For phase one, I would omit the tortillas (maybe try wrapping in lettuce) and use the Southwestern black beans recipe that is somewhere on these boards instead of refried beans.
