Take Along Meals?

Similar to my post in this section about dinner ideas, when you lack time and/or a bountiful refrigerator, let's post some 'take along meal' ideas here.

For example,

Let's say you are going away for the weekend and planning to eat in, what would you prepare ahead to bring along?

What is your favorite quick and easy meal that does not require many ingredients?

Do you have any shortcuts - do you buy any prepared foods at the grocery that you 'doctor up' for a delicious SBD meal?

Easy Thai Chicken in the crockpot is super easy, and very few ingredients.... you could make ahead and bring a spaghetti squash to microwave there.


I would wash/prep broccoli and stuff it in a ziplock bag... bring the olive oil and roast them there.


Shrimp, scallops, fish - - all quick and easy.

Hi Karen, I went away camping and premade turkey rolls, chili,cooked boneless chicken ,bags of salad with tomatoes,peppers etc. ,made roasted peppers and eggplant. The prep day was alot of work but it was great just to reheat the food. joellen

One friend ALWAYS picks up a roasted checken at the grocery store. What she does with it, I don't know.

I sometimes do that, and pick up a bag of romaine... then add cut up
