I found this recipe I had forgotten about, but loved. I made it tonight for dinner and it was a great side-dish! Enjoy!

Cheese Stuffed Zucchini

Non-Stick Cooking Spray

2 Tbsp Olivio or Smart Balance

2 Medium Zucchini

1/4 Cup Chopped Onion

1/2 Cup Chopped Mushrooms

1 Tbsp Chopped Black Olives

3/4 Cup Shredded Cheddar Cheese ** (I actually made it with mozzerella b/c I was out of cheddar and it was yummy, next time I'm gonna try feta, I bet it would be yummy!) **

Salt and Pepper

Preheat oven to 400. Spray a baking pan w/non-stick cooking spray. Cut zucchini in half lengthwise and carefully scrap out pulp, and then chop.

In a skillet heat olivio till foaming subsides add onion, zucchini, and mushrooms. Saute for about 1 minute then lower heat and cover for 3 minutes.

In a bowl add olives, cheese and zucchini mixture, season w/salt and pepper to taste and combine. Spoon mixture into zucchini shells, place in baking dish and cook for 20 minutes.

Yes, once you scrap out the pulp from the inside of the zucchini you are going to chop it up so you can saute it and mix w/the other ingredients.

This may be a dumb question, but I am not too familiar when it comes to cooking zucchinni. I like eating it raw. Anyway, do you take off the peel or leave it on?

I leave the peel on the zucchini.

Hi Karen,

You need to leave the peel on for this recipe b/c you are making a "shell" that you will stuff with the pulp of the zucchini, and if you peel it it will fall apart.
