Hi all. Thought I'd share a few good ideas for meals to make with pesto, since it's the season. I make my own pesto this time of year and freeze it in ice cube trays so it defrosts quickly. You can also by ready-made pesto in stores. It is usually good and, while I'd check ingredients, it should be SBD friendly:

PESTO CHICKEN SALAD:

Cut or shred grilled boneless chicken breasts. Add mayonnaise and pesto to taste (I don't like mine too "wet" so I only put in a little mayo and a lot of pesto). Mix in chopped pecans. Serve on greens with some cherry tomatoes and you've got a great, easy quick meal.


PESTO TURKEY BURGERS

Mix 3-5 TBL pesto into 1 lb. ground turkey breast. Form into patties and grill (if cooking indoors, you probably need some cooking spray in the pan. Again, yummy, and makes a really fast meal along with a salad or cooked veggie.

I have a recipe to add using pesto...

PESTO CHICKEN

Preheat oven to 350 F. Spray a baking dish with olive oil cooking spray.

Lay pounded chicken breasts in dish. Brush lightly with olive oil. Spread (thawed) pesto sauce over chicken. Top with grated romano/parmesan/piave cheese, salt, and pepper. Bake 30 minutes.

Hello What is your pesto recipe if I may ask? I'd like to have some around for easy dinner & lunches. What else can you do with it?
