My sister in law (the dietician) shared this way to have salads on hand with me. It has made life easy!

I wash and chop a head of romaine and keep it in a tupperware in the fridge. Then in a separate tupperware, I combine the following:

1 green pepper, chopped

1 tomato, chopped

1 onion, chopped

1 bunch cilantro, rinsed, patted dry and chopped

1 can black beans, rinsed and patted dry

This "topping" is great! Simply dish out some lettuce and put this stuff on top and there's your salad. I also put some of the topping in a pan with a little olive oil and saute it and then add beaten eggs for my scrambled eggs in the morning (topped with a little shredded cheese).. YUM!

What a great idea!!

I have a similar short-cut I use for omelets. I keep a baggies in the freezer filled with chopped onion, bell pepper and diced ham. I also keep shredded cheese in the freezer. Makes the morning routine a lot smoother!
