No-bake chocolate oatmeal cookies

I have searched the boards for a recipe that I made a few weeks ago, but can't find it. It was for these no bake oatmeal chocolate cookies. They contain cocoa powder, peanut butter, oats, splenda, smart balance, maybe some other things. You start by making the chocolate sauce, then folding in the oats and peanut butter.

Does this ring a bell for anyone? I *really* want to make these again. They were amazing frozen.

Please help me find this recipe!

1 Cup of Land-o-Lakes Soft Baking Butter -or- Olivina margarine (see more on next post about these)

That isn't the recipe. Darn! Thank you for trying, though. The one I'm talking about does not require an oven. You just roll in the oats and they're ready. They don't require flour, either. The recipe was so great - and it was P2 friendly.

I'm starting to think I found it somewhere else, but I'm not quite sure where that would be. How frustrating!

Are these the ones???

CHOCOLATE OATMEAL NO BAKE COOKIES

2 c. splenda

1/2 c. milk

1/4 c. cocoa

1/2 c. butter

1 tsp. vanilla

1/2 c. peanut butter

1/4 tsp. salt

3 c. oatmeal

Combine first 4 ingredients in a pan and bring to a boil on medium heat. Cool 1 minute and add remaining ingredients. Stir well and drop by teaspoons onto waxed paper. These are no bake cookies. Optional: nuts and or coconut.

Yes, indeed! They are so much better frozen, so be sure to do that.

Yes, I'd use smart balance butter, low fat milk and natural peanut butter. Found the recipe on the web and hadn't had a chance to alter it.

how many of these cookies can you have at one serving? After you make them you keep them frozen? joellen

To tell you the truth, I have no idea how many are legal. I usually stick to two a day every few days. And, yeah, I keep them frozen! They're a lot better that way. When I first made them I had one and thought they were OK. Then I stuck them in the freezer and they were out of this world.

I made these last night and they are yummy. I just put them in the freezer, I was thinking they would be better frozen. Then I saw your post and confirmed my thoughts. What an easy and tasty desert. Very chocolaty.
