No-bake chocolate oatmeal cookies

I have searched the boards for a recipe that I made a few weeks ago, but can't find it. It was for these no bake oatmeal chocolate cookies. They contain cocoa powder, peanut butter, oats, splenda, smart balance, maybe some other things. You start by making the chocolate sauce, then folding in the oats and peanut butter.

Does this ring a bell for anyone? I *really* want to make these again. They were amazing frozen.

Please help me find this recipe!

I rolled mine into balls and then rolled them in chopped walnuts & froze them. They taste like (forbidden) truffles! I agree, they are nice. Even my dh likes them (I didn't tell him they have PB in them LOL!)

So you are eating them straight out of the freezer then?

How do you think chunky peanut butter would work in this recipe. I happen to have a whole jar of it and don't want to go out and buy another. Also, how would Hood FF Low Carb Milk do? And, finally, do you think I can't Believe It's Not Butter would work too?

I think all of those would be fine.

Marlane,

I think that would work well as long as it's natural PB.

I was looking through the archived posts and found this. I have been craving cookies and I wanted to find a "safe" recipe. These were good...especially frozen!! Yum!

Natalie

Did you try using only 1-1/2 cups Splenda? How did it work out?

THANKS!

Only the Old fashioned long cooking oats are legal on South Beach.
