Eggplant Mexicana

Eggplant Mexicana-- frome Recipezaar.com:

1 lb eggplant, peeled and cut into 1/2" cubes
1 (16 oz) can tomatoes
2 cloves garlic, minced
1/4 cup onions, minced
1/4 teaspoon Chili powder, more if desired
1 dash pepper
I also added some fresh cilantro

1. Combine all ingredients in a skillet
2. Simmer gently 15-20 minutes or until eggplant is tender
3. Can be done ahead and reheated in microwave

6 servings
Total fat: 0.4 gr
