Cake Recipe for Phase 2?

Hi

My birthday is coming up next week, and my husband and I would like to have a cake. Does anyone know a legal recipe for a cake on the phase two portion on the SBD?

Jan, I'm not sure if there is a phase-2 cake, but in my book birthdays fall into that "special occasion" category where I will always ENJOY without guilt a piece of real cake.

Thank you guys! I know it isn't considered cheating to enjoy a special treat now and then, I was just hoping for a recipe that I could make! :) I guess we will have to have it as a treat though!

I don't know if this will help but in the sbd cookbook there is a recipe (P3 though) for a sponge cake. With strawberries... yum. :) I believe those would be the lowest glycemic cakes. Let me know if you want the recipe and I'll post it. Happy Birthday!

First of all, HAPPY BIRTHDAY!!!!

Second, enjoy the cheat (give away the cake after your one piece so you won't be tempted) or else make as cheesecake per the recipes here. I'm thinking a lemon cheesecake could be dressed up nicely as a birthday cake!

I haven't tried the recipe that uses crystal light. I like the Ricotta recipe with a crust made of pecans or walnuts. I think it's Maggie's recipe. The recipes that use cream cheese are not as SBD-legal since the allowed amount of cream cheese is so small.

Thank you both!

I have the SBD cookbook, so I have access to the Sponge Cake recipe.. Thank you for that suggestion, but I am really not fond of sponge cake! I think I am just going to buy the tiny cake and split it between me and husband and son..or maybe...Ben and Jerry's Ice Cream..Yum! That sounds like a good idea, too!
