I got a recipe from Campbell's Soup on my email and changed it a bit into this really fantastic SBD friendly recipe, so here goes -

Ingredients:

Pre-heat oven to 375 degrees - spray a pan to prevent sticking

Cook for one hour or until done (do not overcook).

Bone-in chicken breasts (I used to huge ones) or 4 small ones

FF Cream of Mushroom Soup (Theirs called for Cream of Chicken)

1/4 cup water

1 tbs. lemon juice

1 tsp. either dried thyme or basil (I used fresh basil cut up very small)

2 slices of low carb bread (your choice) dried and made into crumbs

Add parmesan cheese (about 1/4 cup or so), 1/4 tsp. paprika, salt, pepper, garlic, oregano, etc. and whatever else you like in your breadcrumbs.

Split the soup mixture in half.

Run the chicken thru the soup mixture and then into crumbs

Put into sprayed pan and spray top of chicken with some spray too

After chicken is almost done, heat the rest of the soup mixture (I added some wine for an extra treat) and then pour over the chicken.

You will lick your fingers for hours afterwards. This is a winner, for sure.

You just burst my bubble. But, you are right. I checked the can and it does have modified cornstarch.

I really don't think fresh mushrooms and evaporated milk would be thick enough to adhere to the chicken and then allow for the breadcrumbs to stick.

Oh well, it was good while it lasted.

Could you use a FF yogurt or sourcream? That might work.
