I can't have this yet - but I'm only 2 days away from Phase 2 and have been looking at recipes. I believe this is fine for Phase 2 and beyond (feel free to correct me if I'm wrong). I got this from a friend whose husband goes fishing in Alaska. As a result, they have lots of halibut and salmon to eat up. She said this is really good with fish.


Melon Salsa

Makes about 3½ cups.

1/2 small honeydew melon, cut into small chunks (approx 1½ cups)

1/2 small cantaloupe, cut into small chunks (approx 1½ cups)

1 jalapeno or serrano chile, finely chopped

1/4 Cup coarsely chopped cilantro

2 TBL lime juice

1 TBL olive oil

Salt and pepper to taste.

Combine all the ingredients, mix thoroughly, and set aside in the refrigerator for at least 2 hours for the flavors to combine. Best to use within 24 hours.

Let me know if 1) it's legal and 2)how you like it!

Oh, yes - this is legal for phase 2.

Thanks Cathy! Your variation sounds wonderful!! And I'm a little nervous about eating too much fruit when I first begin Phase 2. So I think I'll try the beans! Are Black beans the best type to use? Yum..and I love cumin too!

Yes, black beans are best for this recipe.
