Here's a lunch idea that I came up with that's pretty easy --

We had chicken breasts for dinner that I had marinated in something that was SBD friendly (sorry can't remember what I used that day). We cooked up quite a few extras that I froze individually in zip loc bags.

I take a small container and put in a scoop or two of guacomole, some salsa, shredded cheese and a few black olives. Put that in the fridge the night before and put a frozen chicken breast with it. Take it to work the next day and put in the fridge and the chicken breast is thawed by lunch time. Heat the chicken in the microwave and then dump all the goodies on top. Makes a yummy lunch and it helps with my cravings for Mexican foods. The possibilities are endless! Enjoy!

Hi,

I tried this with just some salsa & the shredded cheese on top of chicken & it was fabulous. Thank you for this great idea!
