Homemade Pork Sausage

Anyone have a good homemade pork sausage recipe that doesn't use sage? I have a meat grinder and wouldn't mind grinding lean cuts of pork to make sausage.

I often fix breakfast for hubby on sunday mornings of the weekend he works. One of the standbys is "skillet trash" which is eggs, fried potatoes, sausage with cheese on top. I know I can't put the potatoes in but I tried to do sausage, eggs, and cheese this morning using a soy sausage and we ended up throwing it out. No more soy for this house.

My thought was to use lean cuts of pork from the good pork list and to grind it myself and then spice it up. Then I will know exactly what goes in it.

I don't have any good recipes since I have been using store bought sausage, but that's a no-no now. I think I might try this one minus the Sage that DH hates (I of course would put sage in lots of things if I could). I need to ask my ex, he makes some kind of sausage that has mustard seed in it.



Breakfast Sausage

1 pound ground pork

1/2 tablespoon coarse salt

1/2 teaspoon rubbed sage

1/3 teaspoon rubbed summer savory

1/8 teaspoon ground nutmeg

2/3 teaspoon ground marjoram

1/3 teaspoon ground black pepper

Mix well, and form into patties.
