Hi: I have a recipe that I've modified from a couple of others and thought some of you might like it.

Cabbage casserole

1 1/2 lbs lean ground beef

head of cabbage, shredded (I buy 2 bags of shredded from grocery store)

1 large onion chopped

1 clove garlic chopped

1 can tomato sauce, sweetened to taste with Splenda

1 tsp. pepper

1 tsp. sea salt

1 tsp. oregano

1 tsp. basil

1/2 cup brown rice

Brown meat with garlic and onion and drain. Add tomato sauce and seasonings, bring to a boil and add rice. Simmer for 20 minutes. Spray a casserole dish with Pam and layer meat mixture and top with a layer of cabbage. Keep layering until you run out of the meat mixture, topping with cabbage. Bake covered with foil for 1 hour at 350 degrees.

Thanks Jeannette, this looks great. DH has been asking me to make a SB-friendly stuffed cabbage, and I've been putting it off b/c it is so much work. Your recipe looks like an easier version of the same thing (same ingredients, just not painstakingly rolled up so it stays together). I'm going to try it tomorrow.

Thanks for posting your recipe, it sounds delicious!! I LOVE cabbage!

Here is a very simple recipe you may like (I don't even have a name for it)

Brown lean ground pork in frying pan with olive oil.

Remove pork.

Add sliced cabbage to pan, press into the pan to brown and toss to brown the other side.

Add pork to the cabbage with some salt, pepper and garlic powder.

Yum!!

I'm sorry I forgot the water in the recipe. After you add the tomato sauce to the pan add 1 can of water.

Hi Jeannette, recipe sounds great! just in time for the cooler weather too, one question, for the brown rice is that raw rice or cooked? :) thanks, Adele

Hi Adele: Yes that's raw long cooking rice. Please see my message, I think its #3. I forgot to include a can of water in with the tomato sauce, meat & rice mixture.

I cook this often for my family and they really like it.

Thanks for this recipe. I made it tonight and it was a big hit. DH kept saying it was the most he's enjoyed eating in a while. At one point he said, "it's like beefaroni, but with cabbage instead of noodles - that's a good thing." So, I'll definitely be making it again. It came out perfectly. I was also thinking it could be flavored more like eastern european stuffed cabbage (sweet and sour) by adding some vinegar and splenda when you put in the tomato sauce. I might try that next time.
