Oven Roasted Brussel Sprouts

I love oven roasted brussel sprouts. When on P2 or P3 they go really well with roasted sweet potatoes. I buy fresh brussels only and wash them, cut the ends off then cut them in half. Then I drizzle them with olive oil, salt, pepper and garlic powder. If I am cooking them with sweet potatoes I peel and cut the sweet potatoes so they are roughly the same size. Place all veggies on a baking sheet and cook at @ 425 for about a half hour or so. I love my veggies brown around the edges.

I also love brussel sprouts sauteed with olive oil, salt, pepper and sliced shallots! Again, I cut off the the edges and cut the brussels in half before tossing them to the pan and I cook them at a medium heat until they start to brown.

These are great accompaniments (sp?!) to fish, steak or chicken!

Giving these a thumbs up - good with frozen brussel sprouts (which are so much less work than the fresh and, in my opinion, sweeter).
