Hi! I ended up making a modified version of the quiche recipes you all gave me... and it was ~heavenly!!!
6 eggs
1 cup fat free sour cream
3 cups fresh spinach
half white onion diced
8 strips turkey bacon cut into small pieces
1 block of 2% Kraft mild cheddar cheese, grated
1 teaspoon pepper
Mix egg and sour cream with hand blender, stir in cheese, onion and bacon, then spinach.
Pour into an olive-oil-sprayed bread loaf pan.
Put foil over and bake at 375 for about 45 minutes.
Let cool and cut into bread slices. Eat one and freeze the rest!
I cannot believe how heavenly this quiche tastes... I think the sour cream adds a fullness of flavor to it that it wouldnt have had otherwise. The taste is so delicious and, oh, so gormet. I felt like I was out at some bistro somewhere...lol. My bf was so impressed (added bonus, heehee, he's gotten very used to my sbd experimental cooking...he's usually the guinney pig, as well as I.)
Thanks for you all's feedback on the recipes and if there is anyone out there struggling with P1, 2 or 3 for that matter, breakfast ideas... Quiche is the way to go!!
